Apricot with Goat Cheese and Pistachio
Yields: 6-8 servings
Ingredients
24 dried apricots
1/2 cup goat cheese
1/4 cup pistachios, finely chopped
Method
Place apricots on a serving platter. Put 1 teaspoon of goat cheese on top of each apricot.
Spread chopped pistachios on a plate. Press apricots cheese side up into the pistachios, and
serve.
Variation
Use dried pears instead of apricots.
